
The smooth and velvety texture of pudding can be a perfect ending to a wonderful meal. In this case, it can also be used as a breakfast treat, since it is made with pure wholesome foods with no added sugars. The thickness comes from Chia seeds which are loaded with omega 3 fatty acids and ALA (alpha linoleic acid). You can use this as a base recipe and experiment with different fruits. So far, this one is my favorite. Bon Appétit!
In a high power blender add the following:
2 cups coconut milk or almond milk
4 dates that have been soaked for a few hours
4 Tbs. Chia seeds
2 ripe bananas
1 cup blueberries
1 tsp. cinnamon
½ tsp. nutmeg
1 tsp. vanilla
Blend at high speed for 1 minute and pour into individual cups. Refrigerate for an hour before serving. Â Enjoy!!
