Raw Chocolate Pudding

Let’s start by describing this week’s Delectable Dish this way: dark, smooth, velvety, melt-in-your-mouth chocolate, and it is guilt-free!  Chocolate lovers…are you drooling yet?  Raw, dark chocolate is loaded with anti-oxidants and minerals and is often seen as the perfect end to a fabulous dinner or a mid day snack. I will warn you though…raw chocolate is loaded with theobromine, which is a long lasting and gentle stimulant that can keep you awake at night. If you have issues with sleep, do NOT eat this in the evening, but enjoy it as an afternoon snack. Bon Appétit!

Soak ½ cup of organic dates in 1 cup pure water for a few hours

In a food processor, blend the following:

3 soft and ripe organic avocados

Soaked dates and 1 cup date water

¾ cup of raw organic cocoa powder

2 Tbs. chia seeds

1 tsp. vanilla

1 packet Stevia (if you want more sweetness)

Pulse and blend until you have the right consistency for the pudding. You can add more water if you would like it thinner, since the chia seeds will thicken the consistency, the longer it sits.

Enjoy plain, or top with fruit or your favorite nuts.
