Raw Coconut Almond Bars

This snack can be served as a dessert or as a nutritious snack. The raw coconut oil is full of healthy lauric acid which has antibacterial and antiviral properties. Coconut oil is a rich source of medium chain fatty acids which are great for your thyroid and heart. The soaked almonds are high in calcium and trace minerals. Be creative and try adding some raw cocoa to change the flavor. Bon Appétit!

Soak 3 cups almonds overnight

Soak 2 cups pitted dates for about 6 hours

Drain and rinse the almonds and pour them to a food processor

Add the dates to the almonds without the water, but save about ½ cup of the water.

Add the following to the mixture:

½ cup coconut oil

1 Tbs. vanilla

1 cup shredded organic coconut flakes

Pulse all the ingredients until the mixture is well blended.

If it is too coarse, add a bit of the date water.

Drop the mixture into a pan and press lightly to spread evenly into the pan.

Sprinkle shredded coconut over the top.

Refrigerate for about 2 hours to allow the coconut oil to get firm.

Cut into squares and enjoy!
