
I love soups so I was thrilled when I realized that I could enjoy the benefits of raw veggies and still enjoy a bowl of “soul-warming” soup, thanks to the Vita Mix super blender. This soup is packed full of nutrition and is very filling. Remember to “chew” your soup so that the enzymes in the saliva can begin the digestive process. Add your favorite spices to change up the flavor. Bon Appétit!
Add the following organic veggies in your Vita Mix:
3 large carrots
2 stalks celery
½ onion
½ red pepper
3 garlic cloves
Add the following spices:
1 tbs. dry dill
1 tbs. dry basil
Salt to taste
Slowly heat 2 cups organic unsweetened almond milk and 1 cup clean water on your stove top. Do not bring it to a boil, but simply heat until very hot.
Add to your Vita mix and blend at high speed for a few minutes. If the soup is too thick for you, add more water.
Serve with a salad and you have a very nutritious and simple meal. Enjoy!
