Raw Faux-Tuna Salad

Although tuna used to be a great source of protein and healthy oils, I have not eaten it for over 20 years because it has the highest mercury content found in fish. Here is a great alternative to having that “tuna salad” on top of a salad or in a sandwich. The only real preparation involved is soaking your seeds overnight. The rest is easy-breezy. Bon Appétit!!

Soak 1 cup almonds and 1 cup sunflower seeds in clean water overnight.

Drain and rinse.

Place the nuts in a food processor and pulse off and on until the nuts are broken down into small pieces,  but before they turn into “nut butter”.

Empty the nuts in a large bowl and add the following:

1 tsp cruched garlic

2/3 cup mayo

3 chopped celery stalks

2 cups seedless red grapes, sliced in halves

½ onion chopped up finely

Juice of ½ lemon

Salt and red pepper to taste

Mix thoroughly and enjoy right away or refrigerate overnight. The flavors are more prominent and blended the next day. Enjoy with a salad, in a sandwich or on crackers.
