Raw Nori Rolls
This is a great alternative to sushi since it is made with raw plant-based ingredients. You, therefore, don’t have to worry about raw fish and the issue of parasites. They are very satisfying because of the minerals in the seaweed.
1 cup sunflower seeds
2 Tbs. lemon juice
2 tsp. Tamari
½ cup red bell peppers
½ cup grated zucchini
½ cup grated carrots
¼ cup finely chopped greens and onions
Soak the sunflower seeds in 2 cups of pure water overnight. Drain the water and blend the sunflower seeds, lemon juice, and Tamari in a food processor until smooth.
Combine the veggies with the sunflower seed mix and stir.
Lay out a Nori sheet and spread it with a sunflower mixture.
Cover with spinach and roll the sheet. Seal with a little bit of water to make the sheet stick. Slice into 2-inch pieces.
