
The base of this recipe was taken from the Raw-mazing web site. Her recipes are fabulous, although I don’t know that I could spend that much time in the kitchen eating 100% raw. These bite size cookies are to die for. They are moist and naturally sweet. The almonds and chia seeds provide healthy fats, fiber and trace minerals. They take a bit of time to make, but they are so worth the effort. Bon Appétit!
Soak 2 cups of almonds overnight.
Drain and rinse thoroughly the next morning.
In a food processor, add the following:
2 cups soaked almonds
½ cup coconut flour
¼ cup chia seeds
1/3 cup Erithrytol or sweetener of choice
1/3 cup coconut oil
½ tsp. salt
Pulse until well combined. Take 1 Tbsp. and roll into a small ball. Make an indentation in the middle with your thumb.
Puree 1 cup of organic strawberries. Drop a teaspoon on the cookie indentation.
Place in your dehydrator at 115 F for 8 hours.
If you do not have a dehydrator, place the cookies on a cookie sheet lined with parchment paper. Bake a 175 F for about 30 minutes or more, or until the cookies are crisp. Enjoy.
