Raw Sweet Red Pepper Sauce

I find sweet, red peppers so pretty. The color and texture are so bold and inviting. Red peppers are low on the glycemic load scale and are full of anti-oxidants and B vitamins. Red peppers contain lycopenes, a potential agent for cancer prevention. Red peppers also contain Coumaric acid which reduces the formation of cancer causing chemicals like pesticides.  This sauce is a great addition to any fish or vegetable dish. It is raw and therefore very nourishing and full of enzymes. If you have leftovers of this sauce, add it to a raw soup. Bon Appétit!

Add the following to your food processor:

1 container of organic grape tomatoes

2 cups of chopped organic red bell peppers

¼ of an onion

2 Tbsp. grape seed oil

2 Tbsp. balsamic vinegar or apple cider vinegar

2 cloves garlic, chopped

¼ cup fresh cilantro

1 tsp. chili powder

Himalayan salt to taste

Pulse and blend all the ingredients until finely chopped. Pour into a pan and heat gently, only to warm it up a bit. Spread over fish, chicken, turkey or vegetables.  Enjoy!
