Raw Zucchini Kale Salad

I am so enjoying my Spiralizer! I have experimented with a few things and so far this is my favorite salad. It is light but filling and very zesty. Zucchini has a 0 on the Glycemic load which means no sugars or carbs. It is also a great source of Thiamin, Niacin, Pantothenic acid and fiber. Adding Kale, a super food, gives this a bit of crunch and more nutritional value. Top it off with your favorite nuts. This makes 2 small salads or 1 large.  Bon Appétit!

Spiralize 1 Zucchini

Grate 1 carrot

Chop 1 large leaf of Kale into small pieces.

Gently mix them together.

The dressing:

Juice of 1 lemon

2 Tbs. Olive Oil

½ tsp. crushed garlic

1 tsp. Cilantro

10 fresh Basil leaves, chopped finely

½ tsp. Himalayan salt.

Blend with a small whisk and pour over salad.

Top with sunflower seeds or chopped almonds.

Serve immediately. Enjoy!
