Spinach Berry Salad

This salad is very easy to put together. It is pretty to look at and so easy to make. You can prepare the dressing ahead of time because it will keep for over a week.

An important aspect of being Proactive with Prevention is eating 80% of your food raw. Green organic salads are a great way to add fiber. They will also help to keep the body alkaline.

2-4 big handfuls of organic Spinach                                 Lay Spinach  out on a serving plate.

I small red onion, thinly sliced                                            Lay the onions on top

1/3 cup chopped raw walnuts                                             Sprinkle the nuts and raspberries

1 cup organic raspberries                                                  Top with the cheese crumbles

4 oz. Feta or goat cheese crumbles                                    Add the vinaigrette right before serving

Raspberry Vinaigrette

3/4 cup extra virgin olive oil

1/4 cup red wine vinegar or raw apple cider vinegar

1- 2 packets of Stevia, depending on your taste

1 tsp dried basil

pinch of sea salt

1/s cup frozen or fresh raspberries

1/4 cup water

Blend in a blender until smooth. Keep refrigerated .
