Spinach Broccoli Omelette

For those of you who do include eggs in your dietary regime, you will love this Omelette. (That is French for omelet, LOL) It can be served as a breakfast, lunch or dinner. The greens in the omelette provide crunch and a great veggie taste, along with a healthy dose of nutrients. The eggs provide a form of easily digested protein that you need to repair and heal your body. Bon Appétit.

Finely chop the following ingredients:

1 cup spinach

1 cup broccoli

½ onion or 2 small green onions

½ cup mushrooms of choice

½ cup celery

½ cup of fresh parsley

2 garlic cloves

In a separate bowl:

Whisk 4 eggs

¼ cup unsweetened almond milk

1 tsp. of dried dill

Dash of salt and red pepper

Sautee the ingredients in coconut oil or grapeseed oil until the broccoli turns bright green. Add the egg mixture and let sit on low heat. Gently flip the egg mixture and cook until there is no more liquid.
