This pesto is the besto! Like most hearty sun-dried tomato pesto chicken recipes, it fills your soul with happiness.
However, thanks to warrior walnuts, my recipe ALSO fills your body with powerful anti-cancer compounds that have also been shown to increase the beneficial effects of traditional breast cancer treatments! Sun-dried tomatoes are another treat that gives you magnesium, Vitamin C and K, and lycopene. I’d triple this recipe and keep the leftovers for ready-to-go lunches and dinners.

Ingredients:
For the Pesto:
- 1 cup raw shelled walnuts
- 3 cups fresh basil
- 3 cups baby spinach
- 6 cloves garlic
- 1/3 cup avocado oil
- 3 tbsp nutritional yeast
For the Chicken & Veggies:
- 2 tbsp avocado oil
- 1 lb chicken breast, cut into strips
- 1/2 cup sun-dried tomatoes, chopped
- 1 lb green beans, or asparagus
- 2 cups cherry tomatoes, whole
Directions:
- Make the pesto by adding all of the ingredients into a blender or food processor and blending well, set aside
- Heat oil in a large pan and add in chicken breasts, season with salt and pepper on both sides
- Add half of the sun-dried tomatoes in and cook everything for 5-10 minutes until chicken is cooked through, set aside
- Add green beans or asparagus into the hot pan, adding more oil if needed, and cook 5 minutes or until just beginning to wilt
- Add chicken back into the pan, add in remaining sun-dried tomatoes, pesto, and tomatoes
- Mix very well and continue to cook until veggies are well mixed and cooked through. Allow tomatoes to slightly wilt but not bust
- Serve over cauliflower mash or wilted kale and enjoy!
