Tangy Almond Spread

Sometimes I get bored with hummus or regular veggie dips as a quick snack or appetizer. I am so excited about this new discovery! Since I use soaked almonds in so many dishes, I thought I would try my own version of an “almond hummus”. It turned out so tangy and tasty…even my adult children loved it!  Serve this with crackers or veggies. It is even great on sprouted grain toast. Bob Appétit!

Soak 2 ½ cups organic almonds overnight or at least 10 hours. Rinse thoroughly and discard the water.

Blend all the following ingredients in a food processor:

Soaked almonds

1 cup chopped celery

¼ cup onion

2 tsp. chopped garlic

1 tsp. salt

1 Tbs. Bragg’s organic sprinkle (mixture of several herbs)

1 Tbs. cilantro

1 Tbs. dried basil

The juice of 3 lemons or about 1/2 cup lemon juice

1/3 cup olive oil

Pulse and blend until smooth. You can add a bit more olive oil if you want a smoother texture. Enjoy!
