Tangy Bean Salad

This is a simple dish that is high in protein and loaded with cruciferous vegetables. Cruciferous vegetables have special anti-cancer properties and detoxification compounds to support the liver. This makes a large bowl that can be enjoyed for several days. Bon Appétit!

In a large bowl, add the following:

2 cups garbanzo beans

2 cups kidney beans

2 cups black beans

1 cup soaked and sprouted sunflower seeds

Chop up 1 large head of broccoli and cauliflower and add to bean mixture.

Finely chop the following and to bean mixture.

1 onion

3 cloves of garlic

1 cup fresh parsley

½ fresh basil

Dressing:

Mix 1 cup extra virgin olive oil with 1 cup freshly squeezed lemon juice.

Add 1 tsp. Himalayan salt or to taste.

If you like a little sweetness in your vinaigrette, sprinkle a bit of Stevia powder of liquid in the dressing.

Pour over bean mixture and stir carefully. Refrigerate for a few hours to blend the flavors.
