
I don’t know about you, but I am always looking for healthy snacking – munching food. I love raw, soaked nuts, so I thought I would experiment with this recipe to see how it turned out. I brought it to a dinner party and it was a hit! The combination of the almond and sunflower seeds provide a complete protein as well as your daily dose of fiber. The mayo (grapeseed or live oil) provide you with some healthy omegas and the garlic boosts your Immune System. Bon Appétit!
Soak 2 cups of almonds and 2 cups of sunflower seeds in clean water, overnight.
In the morning, drain the water and rinse thoroughly.
Place the nuts in your food processor and pulse and process until fine. Place the buts in a alrtge bowl.
Add the following to the food processor after chopping in large pieces:
5 stalks of celery
½ onion
½ red bell pepper
2 cloves of garlic or 1 tsp. crushed garlic
1/3 cup fresh dill or 2 tablespoons dried
Pulse until finely chopped. Empty into the bowl with the nuts.
Add the following to the nut- veggie mixture
juice of 1 lemon
1/3 cup unsweetened almond milk
1 cup grapeseed oil or olive oil mayo
Add Himalayan salt to taste
Mix thoroughly and let sit for a few hours in the refrigerator before serving. Dip with gluten-free crackers or raw veggies. You can even spread it on a tortilla with lettuce, tomato and avocado. Enjoy!
