Warm Pepper and Tomato Salad

This warm salad offers an alternative to the same old green salad. The warm peppers and garlic are so flavorful that you really don’t need any dressing on the salad. Change it up with various  types of peppers and onions. Bon Appétit!

Sauté the following in 2 Tbs. coconut oil or grape seed oil until barely soft:

4 garlic cloves, chopped up

1 red pepper, thinly sliced

1 red onion, thinly sliced

Add 1 cup of small tomatoes, sliced in half and sauté just enough to warm the tomatoes

Remove from heat.

Add 1 Tbsp. raw apple cider vinegar and stir.

Let the veggies sit about 5 minutes to absorb all the flavors.

Place your favorite organic greens on a plate or in a bowl

Top the greens with the red pepper mixture.

Sprinkle with your favorite salt and dried basil.

Garnish with crumbled goat or feta.

You can drizzle a bit of olive oil and lemon juice if you want more dressing.
