
If you are looking for a very quick and nutritious appetizer, this is it. Artichokes are high in fiber and contain many nutrients like Vitamin K, potassium, magnesium and manganese. If you can find artichokes in a glass container, that is preferred over canned because of the BPA. This only takes a few minutes to prepare but it is very filling and tasty. Slice several artichoke hearts in half, depending on how many people you want to feed.
Place them in a glass or ceramic pan.
Slice a lemon in very thin slices and place a half slice over the artichoke.
I have experimented with adding rosemary, parsley or thyme over the lemon slices and they each add their own special flavor.
Stream a very thin line of Maple syrup or Agave over the lemons if you would like to add sweetness to the lemon. I have enjoyed the lemon slices plain but some people find it too bitter.
Broil on high for about 10 minutes, watching to make sure that the lemon is not burning.
Let cool slightly and enjoy. Eat the artichoke with the lemon slice or without.
