These aren’t your original macaroons. These raw blueberry macaroons are raw, sugar-free, and guilt-free.
Blueberries [1] are high in antioxidants which help reduce DNA damages and free radicals. Blueberries are high in phytonutrients, vitamin C, potassium, vitamin k, manganese, and other essential nutrients. They are also a low glycemic fruit [2].

Ingredients:
1 cup fresh wild/organic blueberries
2 cup unsweetened organic coconut shreds
1 tbsp lemon juice
8-12 drops of stevia, optional can also add more or less
1/4 cup almond flour
3 tbsp coconut cream
2 tbsp coconut oil
Directions:
In a small food processor mix the blueberries and coconut cream until smooth. Add the rest of the ingredients and mix until well combined.
Using a spoon scoop out the mixture and form ‘balls’ on a tray to put in the refrigerator. Refrigerate for 2-3 hours before indulging. You can also drizzle some sugar-free chocolate on top!
