Chicken Artichoke with Fettuccini Noodles

Chicken artichoke with fettuccini noodles is a quick and easy low carb casserole that is bursting with flavor. If you have not tried Miracle Noodles yet, this is a great way to experiment with them. These Japanese yams are very low carb and help replace the pasta cravings. Artichokes are high in prebiotics and fiber and have an array of nutrients and trace minerals like magnesium and potassium.  Bon Appétit!

INGREDIENTS:

 

Miracle Noodle Fettuccini
1 cup sliced Grape tomatoes
Artichoke hearts
2 Chicken breasts – cubed

avocado Oil

1 tsp crushed garlic
Salt and Pepper

2 cups of sliced mushrooms

basil pesto – 1 cup or more – based on your taste
Shredded Parmesan Cheese or goat cheese crumbles  (Optional)

DIRECTIONS:

 

1. Follow the directions on rinsing, boiling and drying Miracle Noodles.

2. Slice 2 chicken breasts and cook in a skillet with avocado oil,  garlic, salt, and pepper. Remove chicken and saute the mushrooms.

3. In a bowl, combine all the ingredients and transfer to a baking dish. Bake at 375 covered for 15 minutes.

4. Uncover and top with Parmesan cheese or goat cheese (optional). Bake for another 15 minutes uncovered.
