It is nice to have a vibrant dish like this Red Cabbage Salad to indulge in. The color, the smells, the flavors bring this meal alive. This nutrient-dense meal is full of antioxidants, phytonutrients, fiber, Vitamin K, Vitamin C, and other essential vitamins and minerals. Basil is a calming herb that is anti-inflammatory and anti-bacterial. Cabbage is a cruciferous vegetable that supports the detoxification of the liver and estrogen metabolism. Bon Appétit!
Ingredients:
1 small Organic red cabbage, sliced
2 large organic carrots, julienned
2 small Organic beets, julienned, Optional
Mix all ingredients in a large bowl.
Thai Basil Pesto:
2 cups Fresh Organic Basil
1/3-cup raw nuts or seeds
2 garlic cloves
1-inch raw ginger
1 tbsp sesame oil or hemp oil
1 tbsp tamari sauce
Mix all ingredients in a food processor. Mix the pesto in with the cabbage salad and ENJOY!
