Ingredients: 

For the Teriyaki Sauce
¼ cup soy sauce (or coconut aminos for gluten-free/soy-free option)
1 ½ tsp monk fruit sweetener (granulated blend works best)
1 cup water, divided
2 tbsp raw honey
3 garlic cloves, minced
1 tsp fresh ginger, grated or minced
2 tbsp arrowroot powder
1 tbsp orange zest

For the Stir Fry
1 lb ground turkey
2 tsp extra virgin olive oil (optional: add a few drops toasted sesame oil at the end for flavor)
3 cups broccoli florets, fresh or frozen
1 small onion, small diced (or substitute leeks)
1 cup shredded carrots
¼ tsp Himalayan or Celtic sea salt
¼ tsp freshly ground black pepper

Directions:

For the Teriyaki Sauce

  1. In a small saucepan over medium heat, combine ¾ cup water, soy sauce, garlic, ginger, honey, and 1 ½ teaspoons monk fruit sweetener. Stir to combine.
  2. Bring to a low boil. In a separate small bowl, whisk together ¼ cup water and 2 tablespoons arrowroot powder until completely dissolved. Slowly stir the mixture into the saucepan.
  3. Allow the sauce to thicken, then remove from heat immediately. Stir in orange zest and set aside until ready to add to the stir fry.

For the Stir Fry

  1. Add 2 teaspoons extra virgin olive oil to a wok or skillet over medium-high heat. (Optional: drizzle a few drops of toasted sesame oil at the end for flavor.)
  2. Add leeks or onion to the skillet and cook for several minutes to soften.
  3. Add in the ground turkey and cook until fully done (internal temperature of 165°F), about 7–10 minutes.
  4. Add broccoli and carrots and cook until tender. Reduce heat to low and stir in the prepared Teriyaki sauce.
  5. Simmer for a few minutes until everything is coated and heated through.
  6. Serve over rice, quinoa, or cauliflower rice for a lower-carb option.
