Sardine Salad

Perhaps this was not a recipe that made your juices flow when you first read the title. I totally get it because when I think of sardines I think of a very strong fishy taste. However, I was pleasantly surprised when I decided to try a few sardines because of the nutritional benefits. Sardines have the highest levels of omega 3 fats than any other fish. They are loaded with B 12, selenium, calcium, and vitamin D, just to name a few. Because sardines are at the beginning of the food chain and feed mostly on plankton, they are quite clean. However, make sure that you purchase Pacific sardines only, according to Seafoodwatch.org.  You can enjoy this salad over grain-free crackers, sea weed or lettuce leaves. Bon Appétit!

In a medium bowl, add the following:

2 cans of wild Pacific Sardines (canned in olive oil or water), chopped up

2 tablespoons olive oil

2 tablespoons grapeseed or avocado oil mayonnaise

1/3 cup chopped celery

1 teaspoon mustard

¼ teaspoon garlic powder

2 tablespoons fresh chopped parsley

1 tablespoon dried chives

Salt to taste

Mix all the ingredients together.

Spread on Nori sheets or on your choice of greens.  Enjoy!
