Wild-caught Pacific Northwest cod is a very mild flavored fish that is high in protein and Omega 3 Fatty Acids which reduce inflammation. It is also one of the best sources of Vitamin B-12 which keep your nerves healthy and supports proper methylation. It evens has a healthy dose of Vitamin D. Slice the following vegetables into a large bowl:
1 yellow bell pepper
1 red bell pepper
1 sweet onion
½ cup Kalamata olive
Top with 1 Tbsp. capers and 1 tablespoon olive oil. Toss gently and sprinkle with a bit of salt.
Spread the veggies in a glass baking dish and bake at 425 F for 10 minutes.
While the veggies are roasting, prepare the cod by spraying with olive oil and seasoning with salt and pepper.
Take out the veggies and place the cod over the veggies.
Return dish to oven and bake another 10 minutes, or until cod is done.
Garnish with a sprinkle of goat cheese and fresh parsley. Enjoy.
