Olive oil is an ancient cancer healer, and garlic and oregano are top-ten healing spices. Beef is a necessary source of protein for health, and the vegetables provide a range of health benefits. All in all, this is a fantastic and quick recipe to whip up any time! It also works well for meal prepping lunches and dinners, so you always have a breast-healing meal on hand! Yum yum!
Ingredients:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced (or more to taste!)
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- ½ cup cherry tomatoes, halved
- ¼ cup Kalamata olives, sliced
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (save some to garnish)
- Juice and zest of one lemon
Directions:
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and garlic, sautéing until fragrant and softened.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in zucchini and bell peppers. Cook for 5-7 minutes until vegetables soften.
- Add Kalamata olives, oregano, cumin, paprika, salt, and black pepper. Stir well and cook for another 2-3 minutes.
- Add in tomatoes and cook just long enough for them to start to blister
- Remove from heat and mix in and fresh parsley, lemon juice and zest
- Top with parsley and enjoy!
