Mediterranean Ground Beef Stirfry

This has all the tantalizing flavors you love in a stir-fry, but each ingredient is hand-selected for both taste and cancer-healing properties!
Olive oil is an ancient cancer healer, and garlic and oregano are top-ten healing spices. Beef is a necessary source of protein for health, and the vegetables provide a range of health benefits. All in all, this is a fantastic and quick recipe to whip up any time! It also works well for meal prepping lunches and dinners, so you always have a breast-healing meal on hand! Yum yum!

Ingredients:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced (or more to taste!)
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • ½ cup cherry tomatoes, halved
  • ¼ cup Kalamata olives, sliced
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (save some to garnish)
  • Juice and zest of one lemon

Directions:

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and garlic, sautéing until fragrant and softened.
  • Add ground beef and cook until browned. Drain excess fat if needed.
  • Stir in zucchini and bell peppers. Cook for 5-7 minutes until vegetables soften.
  • Add Kalamata olives, oregano, cumin, paprika, salt, and black pepper. Stir well and cook for another 2-3 minutes.
  • Add in tomatoes and cook just long enough for them to start to blister
  • Remove from heat and mix in and fresh parsley, lemon juice and zest
  • Top with parsley and enjoy!
