Mediterranean countries have much lower rates of breast cancer because their meals are powered by olive oil, loads of fresh produce, and healthy fats. I wrote a whole blog on it, and luckily, you don’t have to live in the Mediterranean to benefit from their healing diet. This warm cabbage salad is scrumptious, comforting, healing, and very easy to make. You can even save the sauce to liven up other meals.

Ingredients:
- Head of green cabbage, cut into thin slices
- 1 tsp sea salt
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 5 tbsp high-quality olive oil or avocado oil
For the Cashew-Tahini Dressing:
- 2 cloves garlic
- 1 jalapeño, seeds removed
- Hand full of parsley
- 1/2 cup raw cashews
- 1tsp salt
- 2 tbsp high-quality olive oil or avocado oil
- 1/4 cup tahini
- Juice of 1/2 lemon
- 1/2 cup cold filtered water
Directions:
- Put all of the dressing ingredients in a blender and blend until smooth, set aside
- Preheat oven to 420 degrees
- Put the sliced cabbage on a baking pan with parchment paper
- Add in the seasoning and oil and mix the cabbage well
- Bake in the oven for 25 minutes
- (Optional) broil at 450 degrees for 5-7 minutes to crisp cabbage up
- Pour the dressing on top of the cabbage in a bowl, mix and enjoy!
