Ingredients:
For the Cruciferous Bowl:
- 1tsp dry oregano
- 1 tsp dry thyme
- 1 tsp onion flakes
- Zest of 1 lemon
- 1 tbsp avocado or coconut oil
- 2 tsp harissa (Mediterranean roasted red pepper sauce)
- 1 tsp cumin
- 1 BPA-free can of chickpeas
- 1 large head of broccoli, diced into florets
- 1 cup baby tomatoes
For the Tzatziki:
- 1 cup coconut yogurt or grass-fed Greek yogurt
- 1 English cucumber
- 1/4 cup chopped fresh dill
- Juice of one lemon
- 4 garlic cloves, minced
- Salt and pepper to taste
Directions:
For the Cruciferous Bowl:
- Preheat oven to 400 degrees
- In a large bowl mix all of the ingredients together except the baby tomatoes
- Bake in the oven for 15 minutes, then mix in tomatoes and bake for another 5 minutes (or until tomatoes are just starting to burst open)
For Tzatziki:
- Grate the cucumber and use a cloth or paper towel to drain out as much liquid as you can
- Combine the yogurt, cucumber, dill, garlic, lemon juice, and salt and pepper- adjust to taste
- To serve layer tzatziki and pile veggies on top enjoy!
