Turmeric Chicken Veggie Soup

I really enjoyed this Turmeric Chicken Veggie Soup.  Not only is it delicious but it’s also great for those on a healing journey.  Medicinally speaking, Turmeric has been used for thousands of years for everything from sprained ankles to lowering blood pressure. The substance within the turmeric root that makes it such a vibrant yellow color is the same substance that makes it a potent healing source: curcumin.  Research has shown that curcumin has the ability to induce “apoptosis” (cell death) of Breast Cancer cells and also inhibits the growth of Triple-Negative Breast Cancer Cells.

Ingredients:

1 tsp cardamom

1-2 tbsp coconut or grapeseed oil

1 finely diced red onion

2 cloves garlic, minced

1/2 tsp paprika

1/2 tsp Chile powder

1 teaspoon garam masala spice

1 teaspoon turmeric

1 14.5 ounces can of BPA free, organic diced tomatoes 

2 chicken breasts, cooked and shredded (leave out if you prefer a vegan option)

4 cups low sodium chicken broth (use vegetable broth instead if you prefer a vegan option)

1 cup fresh or organic frozen corn

1 cup mixture of vegetables of your choice (I chose a mix of broccoli, cauliflower and baby corn)

Juice of one lime

1/2 teaspoon Himalayan sea salt

1 Serrano pepper, seeded and thinly sliced (optional, but adds a nice spice if desired)

Cilantro for garnish

Sliced green onion for garnish

 

Directions:

1.) Heat oil in a large pot or dutch oven

2.) Add red onion and cook until translucent; 4-5 minutes

3.) Add in cardamom, garlic, garam masala, turmeric, paprika, and Chile powder and thoroughly mix together until fragrant; about 30 seconds

4.) Add in tomatoes and juices and cook for 3-4 minutes

5.) Add in shredded chicken and cook for another 2 minutes

6.) Add in broth, corn, vegetables, Serrano pepper, and lime juice; increase the heat to high and bring to a boil, then reduce heat and allow to simmer for 15-20 minutes

7.) Once done simmering, stir in salt to taste

8.) Garnish soup with cilantro, green onion, and more lime juice if desired and enjoy!
