
Head Coach De’Ann here! I recently returned from a dreamy trip around Korea, and have been craving the bold, smoky, umami-rich traditional Korean dishes. So, of course, I have been in the kitchen concocting my favorite dishes, but with a clean and healing twist like this Galbi, Korean short rib lettuce wraps.
This Korean Short Rib Lettuce Wraps are a nourishing version of Galbi, one of Korea’s most beloved grilled beef dishes. The sugary Korean BBQ marinades have been swapped out for gut-loving, low-sugar ingredients like coconut aminos and sesame oil, resulting in mouthwatering dishes.
The ribs are marinated in potent healing ingredients, such as ginger and garlic, and the kimchi provides an extra probiotic boost. And don’t skip the refreshing cucumber salad on the side! It adds a crunchy, spicy zing that perfectly complements the ribs.

Ingredients:
For the Galbi Short Ribs:
- 4 lbs grass-fed short ribs (flanked style)
- 4 cloves garlic, minced
- 2 scallions, chopped
- 1 tbsp fresh ginger, minced
- 1 cup coconut aminos
- 2 tsp sesame oil
- 1 head butter lettuce (to use as a wrap if desired)
- Kimchi- as a side or topper to your wrap
For the Cucumber Salad:
- 1 lb Persian cucumbers, sliced
- 1 tsp sea salt
- 2 scallions, sliced
- 1 garlic clove, minced
- 2 tbsp coconut aminos
- 2 tsp rice vinegar
- 2 tsp red pepper flakes (or less to taste)
- 2 tsp sesame oil
- 2 tsp sesame seeds
Directions:
- Mix together garlic, scallions, ginger, coconut aminos and sesame oil and cover short ribs to marinate. Marinate in fridge for 4 hours or overnight
- Place a pan on the stovetop on medium heat and sear both sides of the ribs. Then add in the marinade and allow to simmer for 20-30 minutes until tender
- As an alternative you can place the ribs and marinade in an instant pot and cook on high for 30 minutes
- While ribs are cooking mix the sliced cucumbers with the sauces and set aside
- Remove the bones from the ribs, and enjoy over lettuce as a lettuce wrap or on its own! Delicious served with a side of Kimchi
