This Asian Style Cucumber Salad is a great Summertime cold salad. The great thing about this recipe besides the nutrients is the variety of vegetables you can add. You can adjust this salad to your liking. Cucumbers are a great summertime food since they contain about 95% water. The cabbages, peppers, onions, are all a good source of vitamin K, potassium, Vitamin C, and antioxidants. The avocado and healthy oils add in omega 3 fatty acids. When buying produce it is important you are looking for organic and locally sourced when possible.
2 Large Organic Cucumbers
½ red onion
1 cup organic cabbage, sliced
1 small organic red pepper sliced
½ cup organic cilantro, chopped
3 tbsp apple cider vinegar
3 tbsp coconut aminos or tamarin
Dash Himalayan sea salt
1 tbsp sesame oil
1 tsp fresh ginger, minced
Dash of stevia, optional
Prepare the vegetables. In a separate bowl mix together the dressing. Combine the two and serve chilled. Top with sesame seeds and avocado.
