Cruciferous vegetables are so beneficial for supporting healthy hormone levels since they help to cleanse the liver and breakdown unhealthy aggressive estrogens so they can be excreted from the body. Steaming or slightly cooking broccoli makes the nutrients in the vegetable more easily assimilated. Onion and garlic are part of the allium family containing anti-viral, anti-bacterial, and anti-fungal properties. The onion and garlic also add a great aroma and taste to the soup. Bon Appétit!
Ingredients:
2 tbsp coconut oil
½ Onion, chopped
3 Garlic Cloves, mashed then chopped
1 Large Head of Broccoli (roughly 4 Cups), large stems removed
2 Cups Spinach
1 Cup Cauliflower, large stems removed
2 ½ Cups Chicken stock or Vegetable Broth
1 tsp Himalayan Sea Salt
Ground Pepper
Directions:
Add the oil to a large pot over medium heat.
Add the onions and sauté for 2 minutes. Stir in the garlic and cook for another minute.
Toss in the broccoli, cauliflower, and stock or broth and cook for 10 minutes.
Take off heat and add spinach until it is barely wilted. Add in the salt and pepper.
Let the soup cool for a few minutes before adding it to a blender or food processor.
Add the soup in two batches to a blender or food processor until it is thick and smooth to your liking.
Top the soup with your favorite seeds, coconut yogurt, or sautéed vegetables!
