Cardamom Spice Cookies

Do you like your cookies with a little spice? These are egg-free chewy baked cookies that will hit that sweet spot.  They are made with pumpkin seeds and flax seeds for healthy detox and hormone regulation. These cookies are a good source of healthy fats, fiber, protein, magnesium, and antioxidants. They can be enjoyed at any time of the day. Bon Appétit! 

Ingredient:

1 ½ cups raw pumpkin seeds

2 tbsp coconut flour

1 tbsp filtered water

1 tbsp flaxseed meal

3 tbsp coconut oil, softened

15-20 drops stevia

1 tsp stevia powder

2 tbsp gelatin, optional

2 tbsp almond butter, unsweetened

2 tsp vanilla extract

1 tsp cinnamon

½ tsp cardamom

½ tsp Himalayan sea salt

1/3-cup full-fat BPA-free organic coconut milk

Directions:

Preheat oven to 350.

Combine the pumpkin seeds and coconut flour in a food processor and grind till flour like with a few pumpkin seed chunks.  Set aside

In a small bowl combine the flax meal and water let sit for 2 minutes. (flax egg)

In a large bowl combine the coconut oil, vanilla extract, almond butter, and stevia mix well. Add in the coconut/pumpkin seed flour, gelatin (if using) cinnamon, salt, and cardamom. Lastly add in the coconut milk and flax egg.

Line a large baking pan with parchment paper. Shape out about 10 cookies. Cook for 12-15 minutes.
