Cauliflower Chips

These Cauliflower Chips are simple to make with only a few ingredients.  Cauliflower is part of the cruciferous vegetable family providing great amounts of Vitamin C and other antioxidants; like beta-carotene. Cauliflower is well known for its phytonutrient, glucosinolates; which are sulfur-containing compounds. Glucosinolates have been well studied and are known to support the cardiovascular, digestive, immune, inflammatory, and detoxification systems.  These Cauliflower Chips are crunchy, tasty, and can be eaten with your favorite dip or by themselves!  Bon Appétit!

Ingredients:

1 head of cauliflower

1/2 cup almond flour

1/4 cup arrowroot flour or tapioca flour

Dash of garlic powder and onion powder

Himalayan salt to sprinkle on top.

Directions:

Steam or boil the cauliflower for about 15 minutes or until soft to put a fork in. Place in a blender or food processor and blend until smooth. Next, add in the flours and spices and blend.

Turn the oven to 350 degrees. Place parchment paper on a baking sheet.

Scoop out about 1-2 tbsp of cauliflower mix and place it on the parchment paper and spread it out like a flat cookie.  Continue with the rest of the mixture and sprinkle with Himalayan sea salt. Bake for 20-25 minutes. Make sure the chips are thin enough like chips before baking. 

You can also test a few to start. (baking a few to start to see if you need to go thinner or thicker)
