Celery root is also known as Celeriac a very nutrient-rich root that is low in carbs unlike a lot of root vegetables. Celeriac is high in fiber, vitamins; b6, C, K, and minerals; phosphorus, calcium, manganese, and zinc. This is a wonderful soup for those preventing disease and on a healing journey. It is topped with a herby gremolata.
Ingredients:
1 medium-size Celery root peeled and cubed (about 2 cups).
1 cup cauliflower
5 cups bone broth or broth of choice
2 garlic cloves
½ cup onion
1 bay leaf
Himalayan sea salt and pepper to taste
Combine all the ingredients in a saucepan and simmer for about 30 minutes. Remove the bay leaf and blend everything in a food processor or blender. Top with gremolata.
Gremolata:
2 tbsp olive oil
¼ cup fresh organic parsley chopped
1 tsp lemon juice
1 tsp red pepper flakes
1 tbsp garlic minced
¼ cup chopped roasted mixed nuts, optional
Directions:
Mix everything in a small bowl then add to the top of the soup as needed.
