This Detox Cauliflower Chowder is one of those soups you’d actually want to eat on a summer day.Â
This detox cauliflower chowder is simple, flavorful, and naturally detoxifying. It’s the perfect way to get in those cruciferous vegetables like Cauliflower in your diet. Cauliflower is well known for its phytonutrient, glucosinolates; which are sulfur-containing compounds. Glucosinolates have been well studied and are known to support the cardiovascular, digestive, immune, inflammatory, and detoxification systems. I opted to include some organic chicken sausage for added protein. Bon Appétit!
Ingredients:
– 2 heads cauliflower, chopped
– 2 tbsp avocado, coconut, or grapeseed oil
– 1 onion, sliced
– 4 cloves of garlic, minced
– 1 cup filtered water
– 3 cups low sodium vegetable broth
– 3-4 tbsp lemon juice
– 8-ounce mushrooms, sliced
– 1 bunch parsley, coarsely chopped
– salt and pepper to taste
– lemon zest to taste
– (optional) one package of organic chicken sausage, de-cased/crumbled
Directions:
1.) Steam cauliflower for about 12 minutes or until tender
2.) (optional) Cook crumbled chicken sausage until cooked through, take out of the pan, and set aside
3.) Sauté onion and mushrooms in the same pan until browned and tender, add water needed to keep from sticking to the pan
4.) Once cauliflower is done, place in blender or food processor and add in vegetable broth, oil, water, garlic cloves, lemon juice, 1 tbsp of fresh parsley, and salt and pepper to taste
5.) Blend cauliflower mixture until smooth and creamy
6.) Pour soup into bowls (optional: mix in chicken sausage)
7.) Top soup with sautéed onions, mushrooms, a handful of parsley, and lemon zest
