My two favorite things are combined in this recipe to create these Flax Seed “Southern” Biscuits. Flax Seeds are healing powerhouses, I try to get 5 teaspoons in a day. I also encourage my coaching clients to avoid grains because of the increased sugar load that they want to avoid as they are healing their bodies. But, I also want them to look forward to eating food that will build up their body and spirit. Food can be comforting at times.
This is why I am so excited about these grain-free Flax Seed “Southern” Biscuits. They really did taste similar to those fluffy southern biscuits we all love. They were even more delicious with some strawberries and coconut whipped cream! Bon Appétit!
Ingredients:
2 cups Cassava Flour
3/4 cup coconut oil, softened
4 tablespoons ground flaxseeds, mixed with 1/2 cup water
3/4 cup coconut milk, cold
1 teaspoon apple cider vinegar or lemon juice
10-20 drops stevia depending on how sweet you want them
1 teaspoon vanilla extract
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon Himalayan sea salt
Instructions:
1.) Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper
2.) Combine coconut milk with apple cider vinegar in one bowl, and the flax seeds and water in a separate bowl. Set aside.
3.) In a large bowl, whisk together cassava flour, baking powder, baking soda, and sea salt
4.) Add coconut oil to the cassava flour mixture- cut the coconut oil into the flour with a fork until you get a sandy texture
5.) Add in the coconut milk and apple cider vinegar mixture, vanilla extract, stevia, and flaxseed mixture to the flour. Mix until most of the liquid is absorbed.
6.) Roll about 1/2 cup of the dough into a large ball and place onto the baking sheet- repeat until all the dough has been rolled
7.) Place the baking sheet into the oven and bake for 25-30 minutes or until lightly golden
8.) Remove and serve warm! (Also delicious once cooled off)

These were soooo gluey in the middle…I tried baking more, then slicing and baking more…still gluey…flakey on the outside…too much flax? would love to her anyone else’s experience or remedy.
I’m sorry Terry! We haven’t had that issue here. Have you checked your oven temperature with a thermometer??
