Garlic may not be good for kissing, but it does wonders for your immune system, heart, and blood pressure! Add in all the impressive health benefits of mushrooms and cauliflower, and you got yourself one empowering dish. Go on, kiss the chef!
Ingredients:
- 1 tbsp coconut or avocado oil
- 1 onion, chopped
- 1 head cauliflower, cut into florets
- 1lb mushrooms, halved (leave them chunky!)
- 4tbsp vegetable broth
- 8 cloves garlic, minced
- 4 tbsp balsamic vinegar
- 2 tbsp stone ground mustard
- A few drops of stevia to taste
- Chopped parsley to garnish
Directions:
- In a bowl mix together broth, vinegar, mustard, and stevia. Set aside
- Heat oil in a skillet or wok, add garlic and onions, and saute until translucent
- Add in mushrooms and cook for 4-5 minutes, until they render as much liquid as possible
- Add in cauliflower florets and saute until getting slightly golden and crisp on the edges
- Add in vinegar mixture and stir to coat
- Cook veggies until most of the sauce has cooked off, 8-10 minutes, and until cauliflower is begging to soften
- Garnish with parsley and enjoy!
