Who said doughnuts can’t be healthy?
These doughnuts are made with sugar-free and grain-free ingredients and baked with nutrient dense ingredients including some of the highest ORAC value spices; cinnamon, ginger, nutmeg, and turmeric. ORAC stands for oxygen radical absorbance capacity meaning the total antioxidant capacity. Antioxidants can help fight free radical damage, prevent anti-aging and other age-related diseases. Ingredients:
1 Cups Almond Flour
2 tsp Golden Milk Powder (I used Gaia Herbs Golden Milk )
½ tsp Cinnamon Powder
1 tsp Baking Powder (aluminum free)
2-3 tsp Stevia Powder, or 1.5 tbsp Erythritol, or 10 drops of liquid stevia
¼ tsp Himalayan salt
¼ Cup Plain Coconut Yogurt
¼ Cup Unsweetened Cashew Milk or Unsweetened Almond Milk
¼ Cup Coconut Oil softened at room temperature
1 tsp Cinnamon Powder
2 Cage-Free Organic Eggs
½ tsp Vanilla Extract
Icing:
3 tbsp Coconut Butter
½ tsp stevia
Dash of cinnamon
Directions:
Preheat the oven to 350.
Lightly grease a doughnut pan with coconut oil.
Mix the dry ingredients in a mixing bowl first. Then add the eggs, yogurt, milk, and coconut oil. Mix until fully combined with no clumps.
Pour mixture into a baggy and cut a small hole at the end. This allows for easier distribution into the doughnut pan. (you can skip this step)
Fill each doughnut mold. This should make 6 doughnuts.
Bake for 12 minutes or until just turning brown at the top.
Let cool for about 5 minutes in the pan before you try to remove them.
For the icing:
Melt the coconut butter then add the stevia and cinnamon. Drizzle on top of the doughnuts once they have been cooled for about 5 minutes.
