Grass Fed Beef Stew

If you are like me, sometimes it is nice to put together a few ingredients in a crock pot and have it simmer all afternoon. The aromas and the anticipation are amazing. This stew is loaded with healthy fats from the beef but also with additional ghee and beef bone broth. Ghee has very little casein and lactose in it, which is why I often prefer it over regular butter. Serve with a side salad and almond biscuits and you have a well-balanced and nourishing winter meal. Keep in mind that any type of animal protein should be eaten in small quantities – about 3 ounces for women and a max of 6 ounces for men. This serves 8. Bon Appétit!

Turn your crock pot on high and pour 24 ounces of beef bone broth into the pot.

In a large skillet, sauté and brown 2 pounds of grass fed beef stew pieces in 3 tablespoons of ghee or butter until the meet browns lightly. Pour all the juices and the meet into the crock pot.

Add the following to the crock pot:

½ pound of chopped mushrooms of choice

1.5 cups of chopped celery

1 cup chopped onion

2 tsps. Oregano

2 tsps. salt

2 tsps. ground cumin

1 tsp. ground sage

Cayenne to taste

Stir all the ingredients and cook on high for about 2 hours, then lowering the temperature to low. Allow to simmer for another 2 hours and then let sit for about 30 minutes before serving.  Enjoy!
