Greek Cauliflower Chicken Bowl

Double up this flavorful, hearty, and zesty Greek Cauliflower Chicken Bowl recipe because it packs ideal lunch leftovers. I choose to use cauliflower because it is high in fiber, B vitamins, antioxidants, and phytonutrients that can protect against cancer and enhance weight loss! Therefore, dig in and feel like the healthy Greek goddess that you are!

Ingredients:

Chicken & Marinade:

  • 2lbs chicken breast
  • 1/4 cup avocado oil
  • 8 cloves minced garlic
  • 2 tbsp apple cider vinegar
  • 2 tsp fresh or dried thyme
  • 2 tsp fresh or dried oregano
  • 1 tbsp chopped fresh or dried parsley
  • 1 tsp Himalayan sea salt
  • 1/2 tsp pepper

Cauliflower Bowl:

  • 1 large head of cauliflower, riced or chopped into small pieces
  • 1-2 tbsp avocado oil
  • Salt and pepper to taste

Pickled Onions:

  • 1 large red onion, sliced as thin as possible
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1 tsp salt
  • 2 tsp maple syrup 

Remaining optional ingredients to top off bowls:

  • Diary-free (or clean dairy) tzatziki sauce
  • Chopped lettuce
  • Sliced cherry tomatoes
  • Kalamata olives
  • Diced cucumbers 

Directions:

  • Combine all marinade ingredients in a container and allow the chicken to marinate. At least 30 minutes, or overnight
  • Make the pickled onions by combining all of the liquid ingredients in a saucepan. Bring to a hard simmer and then pour over sliced onions in a container. Try to push onions down into the liquid and allow them to soak for at least 30 minutes (pushing down as often as you can). These can be stored in the fridge for 1-2 weeks to enjoy throughout the week
  • Heat oven to 400 degrees
  • Mix cauliflower with oil, salt, and pepper and put on a baking sheet with parchment paper
  • Place marinated chicken on a baking sheet with parchment paper and pour a little of the marinade over each breast
  • Cook cauliflower and chicken in the oven for 25-30 minutes
  • Remove both cauliflower and chicken from the oven. Allow chicken to rest for about 5 minutes and then dice them up
  • Assemble the bowl by placing cauliflower at the bottom, and chicken on top and garnish with desired remaining ingredients (including the pickled onions!)!
