Kale Pesto

This pesto is a simple rich sauce that is a good source of nutrients. This pesto is made with lacinato kale; which is a superfood in its self-containing chlorophyll to help cleans and detox the blood, powerful antioxidants, calcium, vitamin A, C, K, and iron. I switched this pesto recipe up from the usual pine nuts and went with sunflower seeds that are very flavorful and nutritious. Sunflower seeds are rich in vitamin E and healthy fats.  Bon Appétit!

Ingredients:

½ cup raw shelled sunflower seeds, you can also use lightly roasted sunflower seeds

1 Garlic clove

2-3 cups Lacinato Kale

1 Cup Basil

1/3-1/2 Cup extra virgin olive oil

1 tsp lemon zest

1 tbsp lemon juice

Himalayan sea salt to taste

Directions:

Soak the raw sunflower seeds in room temperature water for 4-6 hours or overnight. (You can skip this step if using roasted sunflower seeds) Mix all the ingredients in a high-powered food processor. Enjoy the pesto on a cauliflower crust pizza, miracle noodles, eggs, or zoodles for optimal flavors and nutrition!
