Mediterranean Kale Salad with Cauliflower Rice and Tahini Dressing
The secret to eating kale is to chop the leaves into very small slices then give it a good massage with your hands. This salad is a great way to get a variety of nutrients into one dish. It is loaded with Omega-3 Fatty acids, antioxidants, phytonutrients, soluble and insoluble fiber, and essential vitamins and minerals. Bon Appétit!

Ingredients: For Step 1
2 Cups Cauliflower, shredded
½-1 tsp Garlic powder
½ tsp Himalayan sea salt
Ground Pepper to taste
Step 1:
Heat a medium saucepan over medium heat with 2 tsp of avocado oil. Add the cauliflower and spices to sauté for about 5-7 minutes. Let cool. Proceed to step 2
Ingredients: for Step 2
3 Cups Kale, Chopped finely
1/3 Cup Red onions, Chopped
½ Cup Kalamata Olives Pitted
½ Cup Parsley, Chopped
¼ Cup Goat cheese, optional
½ Cup Walnuts, chopped
Step 2:
Mix all the ingredients into a bowl. Then add the Cauliflower Rice and dressing.
Enjoy the salad alone or with your favorite Protein!
Dressing:
1 tbsp Tahini
3 tbsp Olive oil or Cold Pressed Hemp Oil
Splash of Balsamic Vinegar
½ lemon juiced about 2 tbsp lemon juice
Salt and Pepper
Salmon:
2 Wild Caught Salmon filets
1-2 tbsp dill Fresh or dried
½ tsp Garlic Powder
Himalayan Salt and Pepper
Lemon slices
Place the Wild Caught Salmon Filets in your oven safe pan. Next, add the spices and slice of lemon on the top. Broil the salmon for 12 Minutes or until done to your liking.
