Ranch Chicken Bake

This Ranch Chicken Bake is actually the perfect recipe for people who do not like eating their veggies. It is so delicious that they won’t even notice all the health-packed veggies stopping cancer in its tracks. I also love this homemade Ranch Dressing because it tastes way better than the bottles at the store and is completely free of any processed and toxic ingredients. Enjoy this hearty meal with yourself, as part of meal prepping, or with the whole family!

Ingredients:

Chicken & Veggie Mix:

  • 2lbs chicken breast, cut into bite-size pieces (optional to leave out if you want it to vegetarian)
  • 4 slices of cooked turkey bacon (also optional) for garnish
  • 2 tbsp avocado or coconut oil
  • 1 large zucchini, quartered
  • 1 large squash, quartered
  • 1 lb Brussel sprouts, quartered
  • 1 yellow onion, minced 

Homemade Ranch Dressing:

  • 1 cup veganaise or healthy oil mayo (aka avocado oil mayo)
  • 1/2 tsp salt
  • 2 tsp fresh dill, finely minced
  • 1 tsp apple cider vinegar
  • 1 tsp white wine vinegar
  • 2 tbsp coconut milk
  • 1 tbsp dried parsley
  • 1 tbsp dried chives
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Dry Ranch Seasoning:

  • 1/2 tsp salt
  • 1 tbsp fresh dill, finely minced
  • 1 tbsp dried parsley
  • 1 tbsp dried chives
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

DIRECTIONS:

  • Preheat oven to 425F
  • Mix all of the homemade ranch dressing ingredients in a bowl and set aside
  • Mix ingredients for dry ranch seasoning in a large mixing bowl
  • Add chicken, squash, onion, zucchini, and Brussel sprouts to blow with the dry ranch seasoning, add oil and mix until well covered with seasoning and oil
  • Spread chicken and veggie mixture onto a casserole dish and bake for 30 minutes or until chicken is cooked through
  • (Optional) Broil on high for 5-7 minutes until veggies start to crisp
  • Serve with homemade ranch dressing and (optional) turkey bacon on top as garnishesÂ
