Roasted Tomato Soup

A roasted tomato soup that is so simple and easy to make with just a handful of ingredients!

Tomato soup can be great for boosting the immune system especially as the weather starts to get cooler. Slightly heated tomatoes enhance the benefits of carotenoids; lutein, lycopene, and beta-carotene.

The fresh herbs are really what makes this soup so wonderful… Not only do they provide great flavors, but also come with powerful health benefits. Rosemary, oregano, and basil are all anti-inflammatories, anti-bacterial, and contain powerful antioxidants.  Bon Appétit!

Serving: 2 Large bowls

Ingredients:

2-3 tbsp Coconut oil or avocado

2 ½ lbs Organic Tomatoes

½ medium Onion, quartered

4 Garlic Cloves, Mashed

1 tbsp Fresh Rosemary, chopped

1 tbsp Fresh Oregano, chopped

1 tbsp Fresh Basil, chopped

Salt and Pepper

Directions:

Preheat oven to 425

Prepare a baking pan with parchment paper.

Quarter the tomatoes and onions, and add to the baking pan.

Add the slightly crushed garlic to the pan. (Crushing the garlic breaks the cell wall and enhances nutrient delivery)

Next, drizzle the tomatoes with oil, and sprinkle with your fresh herbs, and salt and pepper. 

Bake for 15 minutes. Transfer to a food processor or a high-powered blender until soup like.

Enjoy right away or transfer to a pot to keep warm!
