Savory Flaxseed Waffles

These waffles aren’t your typical sweet, “pour-syrup-over-them” type of waffles. (although you could enjoy a day of decadence with some real maple syrup on occasion) They are savory and make for a great bread replacement for your breakfast or lunch sandwiches! Flaxseeds are high in magnesium, fiber, omega 3 fatty acids, and support detoxification. Flaxseeds are full of healthy lignans, which protect against the chemical estrogens from the environment by metabolizing them and expelling them from the body. Lignans are anti-inflammatory and powerful anti-cancer agents. A Canadian study proved the power of flax when they fed women with Breast Cancer the equivalent of 5 teaspoons of flax in muffins every day. After 30 days, the tumors were smaller and the blood markers were lower. Bon Appétit!

Ingredients:

4 Cage Free organic eggs ( or egg replacer)

1 tbsp apple cider vinegar

1 Cup ground flaxseed

¼ Cup Full-Fat coconut milk

½ tsp Himalayan sea salt

½ tsp garlic powder

¼ tsp onion powder

¼ tsp ground black pepper

1 tbsp nutritional yeast, optional gives it a bit of a cheesy taste without adding cheese

Directions:

Mix the eggs, coconut milk, apple cider vinegar in a mixing bowl. Then add in the rest of the ingredients until you have a thick batter. Preheat your safe cookware waffle. Scoop out ¼ a cup of batter to each waffle section. Cook until lightly brown. Store in the refrigerator for 7 days. Toast the waffles for reheating. They are great to make on a Sunday and have on hand for a busy week.
