Sloppy Joe

Ingredients:

  • 1 onion minced
  • 6 garlic cloves minced
  • 1lb grass-fed ground beef
  • 1 red bell pepper
  • 1 cup tomato sauce (or organic marinara sauce)
  • 1/4 cup tomato paste
  • 1 tbsp coconut aminos
  • 1 tbsp dijon mustard
  • 1 tbsp red wine vinegar
  • 4 medium sweet potatoes 
  • 1 tbsp avocado oil

Directions:

For Crockpot:

  • Heat coconut oil in a medium pan. Add garlic and onions and cook until aromatic. Add ground beef and cook until completely browned- about 5 minutes. Drain any fat. 
  • Place beef mixture in a crockpot with remaining ingredients (except sweet potatoes) and stir. Cook on low for 6-7 hours or high for 3-4 hours.
  • About an hour before you are ready to eat preheat the oven to 425 degrees
  • Place sweet potatoes in the oven for 45 minutes or until tender all the way through
  • To serve cut sweet potato open and spoon sloppy Joe mixture on top, garnish with green onions and even a few drops of hot sauce if desired

For Stovetop:

  • Heat coconut oil in a medium pan. Add garlic and onions and cook until aromatic. Add ground beef and cook until completely browned- about 5 minutes. Drain any fat. 
  • Add red bell pepper and cook for a few minutes until tender
  • Add in remaining sauce ingredients and stir to combine
  • Lower heat and allow to simmer for 45 minutes to an hour
  • While simmering preheat the oven to 425 degrees
  • Place sweet potatoes in the oven for 45 minutes or until tender all the way through
  • To serve cut sweet potato open and spoon sloppy Joe mixture on top, garnish with green onions and even a few drops of hot sauce if desired
