Sauce/Gravy:

1 tablespoon avocado oil
1 large onion thinly sliced
2 cloves of garlic minced
1 cup of chicken broth
2 tablespoons of grain-free flour
1 tablespoon Coconut Aminos
2 teaspoons paprika preferably smoked
1 teaspoon freeze-dried thyme

Chicken:

4 Chicken breasts
Salt and freshly ground black pepper to taste

Directions:

  • Season generously: Start by patting your chicken thighs or breasts dry, then season both sides with sea salt, cracked pepper, and a dash of paprika for extra warmth. Don’t be shy—flavor is key!

  • Sear for flavor: Heat a drizzle of avocado oil in a large skillet over medium-high heat. Sear the chicken for 3–4 minutes per side, or until it gets a nice golden-brown crust. Transfer to your slow cooker.

  • Sauté the aromatics: In the same skillet, add sliced onions and sauté for about 3 minutes until softened. Add in minced garlic and stir for another 30–60 seconds, just until fragrant.

  • Create the base: Sprinkle in your grain-free flour (like almond, coconut, or green banana flour) and stir to coat the onions and garlic evenly. Cook for about 1 minute to mellow out the raw flour taste.

  • Build the sauce: Slowly pour in the chicken broth while whisking to create a smooth, thickened gravy. Stir in coconut aminos, thyme, and an extra pinch of sea salt. Let it simmer for a couple minutes to bring the flavors together.

  • Slow cook to perfection: Pour the gravy over the chicken in your slow cooker, making sure each piece is nestled in that rich, savory sauce.
