Sushi Burrito

Compared to Asian cultures, Western society does not incorporate seaweed in their daily diet. When I was introduced to the Macrobiotic lifestyle in the late ’70s, I was amazed at how versatile and tasty seaweeds actually were. There are many types of seaweeds and many tasty ways to enjoy them. By eating a clean, balanced diet and incorporating various seaweeds with your meals, you are fueling your body with incredible antioxidants and powerful anti-cancer extracts. How grateful we should be for something as simple as seaweed!

This is a delicious Asian inspired meal that is loaded with healthy fats, protein, fiber, antioxidants, and essential vitamins and minerals. Enjoy for lunch or dinner!  Bon Appétit!

Makes 2 Burritos


2 Raw Nori Sheets

½ Head Cauliflower,

1 Avocado, sliced

1 Organic Cucumber, sliced into sticks

1 tsp apple cider vinegar

¼ Cup of mayonnaise or veganaise

1 BPA Free safe catch wild caught salmon or ½ lb wild caught salmon, cooked

Organic Gluten Free Tamari sauce, optional as a side


Shred the cauliflower to make cauliflower rice, or put in a food processor and pulse until rice like.

In a medium pan, add 3 tbsp of water and cook the cauliflower rice for about 5-7 minutes until soft. Keep adding water as it evaporates out.   Once cooked and no liquid remains, remove from heat and add in the apple cider vinegar and set aside.

In a small bowl mix the salmon and mayonnaise of choice together. If you are cooking fresh wild caught salmon cook at 425 degrees for 12-15 minutes.

Cut the cucumber and avocado

For the preparation of the burrito:

Lie out the sheet of seaweed; put half the cauliflower rice spread out leaving a ½ inch on all four sides empty. Next, add the cucumbers and avocado in the middle then add the salmon along the side of the cucumber and avocado. Seal the sides with a brush of water. Roll it up like you would a wrap or a burrito.
