Who could say no to chocolate pudding?! This deliciously creamy Avocado Chocolate Pudding is rich with antioxidants and guilt-free! Avocado is very versatile and nutritious food. They provide over 20 essential nutrients such as potassium, Vitamin B and E, and folic acid. Raw cacao has one of the highest ORAC values topping Goji berries and blueberries. Adding avocados and raw cacao together make for a superfood dessert! Bon Appétit!
Ingredients:
2 ripened organic avocados (small-medium size)
1/3 cup Lilly chocolate chips
2 tbsp. raw cacao
½ cup organic coconut cream (top part of coconut milk in a can). Full fat coconut milk has more of the cream at the top
Directions:
Melt the chocolate chips and set them to the side to cool. In a small food processor add all the ingredients in and mix until smooth. Add in the melted chocolate and blend. Taste for sweetness if you want it sweeter you can add a few organic stevia drops. Refrigerate for at least 2-3 hours before enjoying to become pudding-like. I topped it off with hemp seeds and raw pumpkin seeds for a nice crunch.
