Since each ingredient has been carefully chosen for maximum health and taste benefits, you will want to make this Spicy Beef Stirfry with Quick Pickled Radishes recipe over and over again.
Ingredients:
StirFry
- 1lb grass-fed ground beef
- 1tsp avocado or coconut oil
- 4 cloves garlic, minced
- 4tsp ginger, chopped
- 3 heads of baby Bok Choy, sliced
- 2tbsp coconut aminos
- Few drops of stevia for a bit of sweetness
- Himalayan sea salt and pepper to taste
Quick Pickled Radishes
- 6 radishes, sliced
- 2tbsp sesame oil
- 2tbsp rice vinegar
- Himalayan sea salt and pepper to taste
Optional Spicy Mayo
- 4tbsp healthy oil mayo (like avocado oil mayo) or veganase of your choice
- 4tbsp Gochujang (fermented chili paste, easily found in most International Aisles of the grocery store)
Directions:
- Add the radishes to a bowl with the sesame oil, rice vinegar, salt, and pepper and set aside to marinate. Stir occasionally and allow to marinate for at least 10 minutes.
- Add oil to a pan or wok and add ginger and garlic. Allow cooking until fragrant, about 1-2 minutes.
- Add in beef and cook stirring, and break up the beef until cooked through about 4-5 minutes.
- Add in stevia, coconut aminos, and sliced Bok Choy and stir, allow to simmer until Bok Choy is tender but still crisp
- To make optional mayo- combine mayo and gochujang, and add more or less gochujang for a higher or lower spice level
- Serve beef over cauliflower, broccoli, or sautéed cabbage and top with pickled radishes (including some of the liquid), enjoy!
