No-Bake Fruit Fudge Bar

no-bake fudge bar

Who says you have to sacrifice sweetness to stay sugar-free? This decadent no-bake fruit fudge bar is proof that you can enjoy rich, chocolatey indulgence without processed sugars—or the blood sugar spike.

Made with naturally sweet bananas, antioxidant-rich berries, and stevia-sweetened chocolate chips (like Lily’s), it’s a dessert that feels like a cheat—but isn’t. A scoop of protein powder and a spoonful of almond butter help balance blood sugar and keep cravings in check.

That said, every healing journey is unique. Even natural sugars can impact your blood sugar levels—especially when you’re navigating cancer. We recommend testing your blood sugar before and after trying new recipes. For more guidance on how blood sugar affects cancer, this blog post is a must-read.

A few bites of this no-bake fruit fudge bar may be all you need to feel nourished, satisfied, and totally in control.

Ingredients:

  • 2 Bananas
  • 4 oz lily’s chocolate chips, melted
  • 1 scoop of your favorite vanilla protein powder –  I used grass-fed Whey Protein
  • 1 tbsp almond butter
  • Berries of choice, sliced –  I chose strawberries, blueberries and raspberries

Directions:

  • Blend together bananas, melted chocolate chips, protein powder and almond butter in a blender
  • Line a container with parchment paper and layer your fruit on the bottom, make it pretty!
  • Pour your chocolate banana mixture over the fruit and make sure everything is covered
  • Put into the freezer for 2 hours to set, then store in fridge and enjoy!
